Ingredients

Serves
  • Quark, medium-fat150 g
  • Unsweetened cocoa6 g
  • Maple syrup8 g
  • Unsalted almonds10 g

From your store cupboard

Instant coffee

If you can’t get it

  • Maple syrup → honey, agave syrup or a teaspoon of sugar dissolved in a little water

Method

  1. Dissolve a teaspoon of instant coffee in a tablespoon of hot water and let it cool. Hot coffee would split the quark into grains.
  2. Whisk the quark 2 minutes, until it stops being grainy.
  3. Stir in the coffee, the unsweetened cocoa sifted through a sieve and the maple syrup.
  4. Chop the almonds, toast them 3 minutes in a dry pan and scatter them over the quark.
  5. Chill 15 minutes. It thickens until a spoon stands in it and the flavours knit.
