Ingredients

Serves
  • Rice cakes25 g
  • Honey20 g
  • Bananas1

If you can’t get it

  • Honey → maple syrup

Method

  1. Pick a banana with a freckled skin. A greenish one is starch, which digests slowly; a freckled one is sugars, in the blood within tens of minutes.
  2. Cut it into rounds 5 mm thick.
  3. Spread the rice cakes with honey just before eating. Within 10 minutes they soften and shatter at the first bite.
  4. Lay the banana rounds on them. The honey works as glue, so they don’t slide off.
  5. If you’re taking it with you, carry the rice cakes and the topping separately and put them together when you get there.
