Ingredients

Serves
  • Porridge oats45 g
  • Bananas1
  • Maple syrup5 g

From your store cupboard

Ground cinnamonSalt

If you can’t get it

  • Maple syrup → agave syrup or a teaspoon of sugar dissolved in a little water

Method

  1. Cook the oats in 200 ml of water with a pinch of salt for 4 minutes. Water instead of milk is deliberate here; milk fat would push the porridge over the limit.
  2. Mash half the banana and stir it in while still on the hob. It sweetens and thickens the porridge, so no sugar is needed.
  3. If it thickens too fast, add water a spoonful at a time. Poured in all at once it makes a layer on the surface that never joins the porridge.
  4. It’s done when the spoon leaves a trail on the bottom of the pan for a second.
  5. Slice the rest of the banana over the top, trickle over maple syrup and dust with cinnamon.
