If you can’t get it
- Maple syrup → agave syrup or a teaspoon of sugar dissolved in a little water
Method
- Cook the oats in 200 ml of water with a pinch of salt for 4 minutes. Water instead of milk is deliberate here; milk fat would push the porridge over the limit.
- Mash half the banana and stir it in while still on the hob. It sweetens and thickens the porridge, so no sugar is needed.
- If it thickens too fast, add water a spoonful at a time. Poured in all at once it makes a layer on the surface that never joins the porridge.
- It’s done when the spoon leaves a trail on the bottom of the pan for a second.
- Slice the rest of the banana over the top, trickle over maple syrup and dust with cinnamon.
