  • Chopped tomatoes — 400 g tin½ tin

Chilli flakesSaltSmoked paprikaGround cumin

Method

  1. Fry the onion and pepper in the oil, add the garlic, cumin, smoked paprika and chilli flakes, and after a minute the tomatoes.
  2. Tip in the rinsed lentils, add 250 ml of water and cook 20 minutes. The lentils stand in for mince here — they break down and thicken it.
  3. Add the drained beans and the sweetcorn and cook another 10 minutes.
  4. At the end stir in a teaspoon of unsweetened cocoa. It doesn’t add a chocolate flavour, it just deepens the earthiness that the meat would otherwise be providing.
  5. Serve with rice. The chilli is markedly better on the second day — the spices join up overnight.
