If you can’t get it
- Soba noodles, or wholemeal spaghetti → wholemeal spaghetti or rice noodles
- Gochujang — Korean chilli paste → sriracha or hot ajvar + a teaspoon of syrup — it is a hot sweet paste and this stands in for it
- Erythritol or another baking sweetener → honey, maple syrup or sugar — they sweeten the same, they just add calories
Method
- Put the eggs on to boil for 8 minutes.
- In a bowl mix the gochujang, a spoonful of vinegar, a spoonful of soy sauce, a teaspoon of sweetener and a teaspoon of sesame oil. The vinegar is what makes it — without it the sauce is just sweet and hot.
- Cook the noodles as the packet says, then rinse them under cold water until they’re properly cold. The whole dish stands on this; lukewarm noodles in a hot sauce are horrible.
- Cut the cucumber into thin matchsticks, pat the tofu dry and cut it into cubes. In Korea bibim guksu gets meat or tofu alongside the egg — without it you have a plate of noodles and nothing else.
- Toss the cold noodles through the sauce until they’re red all over.
- Pile into bowls, top with the cucumber, tofu and the halved eggs, and scatter over the sesame.
