Ingredients

Serves
  • Quark, medium-fat150 g
  • Porridge oats50 g
  • Eggs2
  • Bananas1
  • Maple syrup10 g
  • Frozen blueberries / mixed berries100 g

From your store cupboard

Bicarbonate of sodaGround cinnamon

If you can’t get it

  • Maple syrup → honey, agave syrup or a teaspoon of sugar dissolved in a little water

Method

  1. Blitz the oats to a flour, then add the quark, the eggs, some of the banana, half a teaspoon of bicarbonate of soda and the cinnamon. Blitz to a smooth batter.
  2. Let the batter stand 10 minutes — the oat flour takes up the moisture and the pancakes will hold together. Without that they fall apart in the pan.
  3. Heat a non-stick pan to a gentle heat and cook them with no fat. Over a high heat they blacken outside and stay liquid inside.
  4. Pour small rounds and cook 2 minutes, until bubbles form on the surface, then turn them and cook a minute more.
  5. Warm the berries for a minute in a pan with a splash of water, so they give out their juice.
  6. Stack the pancakes, spoon the berries over, slice the rest of the banana on top and trickle over the syrup.
