Ingredients

Serves
  • Porridge oats45 g
  • Skyr120 g
  • Semi-skimmed milk150 ml
  • Protein powder — whichever one you have20 g
  • Chia seeds8 g
  • Unsweetened cocoa5 g
  • Maple syrup5 g

From your store cupboard

Instant coffee

If you can’t get it

  • Maple syrup → honey, agave syrup or a teaspoon of sugar dissolved in a little water

Method

  1. Dissolve a teaspoon of instant coffee in two tablespoons of hot water, or make an espresso, and leave it to cool completely.
  2. Whisk the protein powder into the milk until smooth before the oats go in. Tipped in on top of the oats, it clumps into lumps you’ll never stir out.
  3. Stir the oats, chia seeds and half the coffee into the protein milk. Give it another stir after five minutes.
  4. Stir the rest of the coffee and the maple syrup into the skyr.
  5. Layer the oats and the coffee skyr in a glass, finishing with cream on top. Cover and chill for at least 2 hours, ideally overnight.
  6. In the morning, dust the top with cocoa through a sieve. If it has set too thick, stir a little milk into the bottom layer.
