Instant coffee
If you can’t get it
- Maple syrup → honey, agave syrup or a teaspoon of sugar dissolved in a little water
Method
- Dissolve a teaspoon of instant coffee in two tablespoons of hot water, or make an espresso, and leave it to cool completely.
- Whisk the protein powder into the milk until smooth before the oats go in. Tipped in on top of the oats, it clumps into lumps you’ll never stir out.
- Stir the oats, chia seeds and half the coffee into the protein milk. Give it another stir after five minutes.
- Stir the rest of the coffee and the maple syrup into the skyr.
- Layer the oats and the coffee skyr in a glass, finishing with cream on top. Cover and chill for at least 2 hours, ideally overnight.
- In the morning, dust the top with cocoa through a sieve. If it has set too thick, stir a little milk into the bottom layer.
