  • Chickpeas — 400 g tin½ tin

Chilli flakesSaltWine vinegarGround cumin

Method

  1. Cut the onion into thin half-moons and fry it in the oil 15 minutes over a medium heat, until brown and crisp. This fried onion is the koshari — without it you have pulses with rice.
  2. Cook the lentils in unsalted water 25 minutes, and cook the rice and the pasta separately as the packets say.
  3. Sauce: passata with a teaspoon of cumin, a tablespoon of vinegar and the chilli, cooked 10 minutes.
  4. Layer it into a bowl: rice, lentils, pasta, drained chickpeas.
  5. Pour the tomato sauce over and pile all that fried onion on top. It gets mixed at the table.
