Baking powder

If you can’t get it

  • Erythritol or another baking sweetener → honey, maple syrup or sugar — they sweeten the same, they just add calories

Method

  1. Put the quark in a bowl and mix it with the eggs, the wholemeal flour, the sweetener, the baking powder and the grated lemon zest.
  2. Let it stand 10 minutes; the flour takes up the moisture.
  3. Roughly chop the walnuts.
  4. Put a non-stick pan over a medium-low heat and spread a drop of oil over it with paper.
  5. Spoon the batter on and cook 2 minutes each side. Turn them once bubbles appear on the surface.
  6. Greek yoghurt, berries and chopped walnuts on top.
